Here’s what her daughter Chelsea Koi had to say in her entry:
She has raised three children and taken on a fourth. She raises chickens and keeps an impeccable garden. She makes the best food you'll ever eat and runs a successful ice cream truck business. She puts her family first and cares deeply about the people in her life. She gets my car detail(ed) while I'm on vacation and gives me flowers just because....can you say superwoman? I love you, Mom.
We asked Chelsea about that mysterious fourth child, and she told us in an email:
“The fourth child is my new husband :-) I guess we're not such children anymore (all in our 20's) but we still go to her for everything....she's our rock :-)”
