My EASY no-bake chocolate and peanut butter cookie recipe!

Fall is here! Wind is breezing through the streets of Redmond and umbrellas are now being used on a regular basis. 'Tis the season to start your ovens and START baking. No matter what level of baker you are, my no-bake cookie recipe is simple and delicious.

No-bake cookie recipes are PERFECT for a beginner baker, who is still trying to learn basic baking and cooking techniques or a busy person who wants something sweet and homemade. Check out my yummy recipe below:

KIMM'S NO-BAKE CHOCOLATE AND PEANUT BUTTER COOKIE RECIPE

Tip: Have everything measured out and prepped. This recipe goes by quickly!

DIRECTIONS:

-Melt 3 tablespoons of unsalted butter in a medium saucepan over medium heat.

-Add: 3/4 cup white sugar, 2 tablespoons cocoa, and 1/4 cup water. Stir with a heat safe spatula until just combined.

-Add: 1/4 cup creamy peanut butter, 1 cup semi-sweet chocolate chips, and 1 1/2 cup oats. Stir until uniform.

-Now, drop tablespoons onto a parchment-lined sheet pan. "Mold" into a round, cookie shape with your hands.

-Let cool, this will take 15-30 minutes at room temp.

-Now, devour with a friend. Or by yourself. Whatever you choose.

 

This recipe is also easy to modify. Once you add a new ingredient, it becomes new and YOURS. I like subsituting agave nectar for white sugar, adding chopped nuts for a salty kick, and adding some toasted coconut for an extra sweet touch.

Not only do they have featured readers like Kathleen, but the open mic portion encourages anyone from the community to read their work. It's regularly quite good. All those with a hunger to get their work out in the world should attend.
