Sweetened condensed milk vs. evaportated milk

Sweetened condensed milk and evaporated milk may seem similar, but both have different tastes and uses. Read my brief description to discover some of the differences!

Baking season is here! With Thanksgiving and the holidays, you are sure to stumble upon similar ingredients in the baking field. Some ingredients may appear to be similar, but are not.

Sweetened condensed milk and evaporated milk are two main ingredients in the baking world. Yet, they are vastly different and are not interchangeable. Both are very shelf-stable friendly dairy products that come packaged in small cans. Always make sure you buy cans that are NOT damaged and/or expired.

SWEETENED CONDENSED MILK: A mixture of whole milk and sugar (about 45 percent sugar), boiled until 60 percent of the water has been removed/evaporated. Thus, a very thick and sweet mixture is left.

Example: Key Lime pie filling is made with sweetened condensed milk.

EVAPORATED MILK: This uses whole milk where 60 percent of the water has been removed/evaporated by boiling. Thus, a very unique-tasting dairy liquid is left. The mixture is thin, not sweet, and has little health value versus whole milk.

Example: Pumpkin pie and German chocolate cake fillings are both made with evaporated milk.

I constantly bake with the two and love the unique taste they add to all of my sweet stuff!
